Edamame Guacamole

1 medium avocado

1 cup edamame 

1 small garlic 

1/4 red onion or ½ shallot

¼ cup coriander 

1 juice of a lime or 1 tbsp lemon juice

2 tsp olive oil 

1 tsp cumin powder 

Cracked pepper to tastes

Optional ¼ fresh red chilli 


Method

  1. Grill tortillas in the oven: Preheat your oven to 375°F (190°C). Brush corn tortillas with olive oil on both sides. Arrange them in a single layer on a baking sheet. Bake for 8–10 minutes, flipping halfway through, until they’re slightly browned and crispy.

  2. Cook edamame: Boil edamame (about 5 minutes if frozen). Drain and cool.

  3. Blend edamame: Add cooked edamame to a blender or food processor. Pulse until roughly mashed.

  4. Mash avocado: Scoop avocado into a bowl and mash with a fork.

  5. Combine: Add blended edamame, chopped garlic, red onion (or shallot), coriander, lime juice (or lemon), olive oil, cumin, and pepper to the bowl. Mix well.

Serve: Serve the guacamole with the grilled tortilla chips or cut the tortillas into wedges. Enjoy!
