Silky Steamed Eggs with Ginger Soy Drizzle, Fresh Herbs & Optional Toppings

Ingredients:

For the Eggs:
  • 2 large eggs
  • Water (weigh out to match the weight of the eggs — 1:1 ratio)
For the Ginger Soy Drizzle:
  • 1 tsp soy sauce
  • ½ tsp sesame oil
  • 1 tsp grated fresh ginger
  • Optional: squeeze of lemon or rice vinegar for brightness
To Serve:
  • Handful of fresh coriander leaves (or substitute with steamed broccoli)
Optional Toppings:
  • Crispy garlic or fried shallots
  • Chilli oil or chilli crisp
  • Thinly sliced spring onions
  • Toasted sesame seeds
  • A drizzle of extra sesame oil

Instructions:

  1. Prepare the eggs and water:
    Crack the eggs into a bowl and whisk gently until smooth. Weigh the eggs, then add an equal weight of water. Whisk again to combine.

  2. Steam the eggs:
    Pour the egg mixture into a heatproof bowl or shallow dish. Cover with foil or a plate to prevent water droplets from falling in.
    Place the bowl in a steamer over medium heat and steam for 10-12 minutes, until just set with a soft, silky texture.

  3. Make the drizzle:
    In a small bowl, combine soy sauce, sesame oil, and grated ginger. Stir well.
    Optional: add a small squeeze of lemon juice or rice vinegar to brighten the flavours.

  4. Add optional toppings:
    If using crispy garlic or shallots, you can fry them while the eggs steam. Heat a little oil in a pan, add thinly sliced garlic or shallots, and fry until golden. Drain on paper towels.

  5. Serve:
    Once the eggs are set, drizzle the ginger soy sauce over the top. Scatter over fresh coriander leaves (or serve with steamed broccoli).
    Sprinkle any optional toppings like crispy garlic, spring onions, sesame seeds, or a drizzle of chilli oil for extra flavour.

  6. Enjoy:
    Serve warm, either as a light meal or alongside rice, noodles, or vegetables.
